You should always thank them first for their interest in hiring you and hinting that there’ll be a future chances for you to work together with them. Do not drag the process as they might have other people waiting for the job.
The key with this is to be very polite and apologetic. Don’t step on toes, because there is a chance that one day, you may come across these people again. Never ever insult or offend the person offering the job. They have been good enough to put you top of their list, and you should return the favour when declining!
